This week myself and my sister are setting ourselves new healthy and motivational goals before we go on holiday! We have started today with a wonderful creation of carrots, celery, kale and pasta! This is a light and certainly tasty meal fit for lunch and dinner at work or home!
This meal is perfect for those wanting to be a bit more adventurous, eat healthy, suitable for vegetarians and pasta lovers all round! Depending on how hungry you are or how many you are serving, you may need to increase the ingredients within the list below:
What you will need:
- 3 Carrots (Peeled)
- 3 sticks of Celery
- 1 Small Onion
- A handful of kale
- Half a bag of any form of pasta
- A pinch of salt
- A good amount of ground pepper
- A pinch of garlic
- A small amount of oil
- A dash of lemon juice
- Italian Herbs (Optional)
- Cream/Pasata/Milk (Optional)
Preparation and Cooking - 15 to 20 minutes:
Boil your kettle and pour it into a medium size pan.
Peel and chop up all of the carrots, celery and the onion into chunks, adding the pepper and oil.
Blitz them in the blender until they are in a shredded like consistency.
Place the kale into a frying pan and then the blitzed vegetables. You can add a small amount of cream, pasata or milk to make some sauce.
Once the water is boiling add the pasta.
Keep mixing both until they are ready.
Once they are ready strain the pasta and mix both together throughly. Add garlic, more pepper and lemon juice to the final product.
